As an herb in the broad sense, its leaves (green garlic, garlic chives), scapes, and flower buds are used fresh, alongside the familiar bulb that is technically a vegetable. The plant's foliage is mild and grassy-green, carrying the same sulfur compounds that define garlic's unmistakable aroma, and is used as a seasoning herb in much the same way as chives or spring onion.
