White Beets
White beets (also sold as Albino or Avalanche beets) are the most delicate and mild of all beet varieties. Their creamy white flesh and zero-stain property make them a refined choice for elegant dishes where color neutrality is important.
Off-white to pale cream exterior with a bright white interior. Globe-shaped, similar in form to red beets. No staining whatsoever — entirely clean to work with.
Texture: Slightly denser and firmer than golden beets. Holds its shape very well during cooking.
Flavor: The mildest of all beet varieties — sweet and clean with almost no earthiness. Sometimes described as tasting like a very mild turnip or parsnip. Excellent for those who find red beets too intense.
Roasting
Roast to deepen the mild sweetness. Excellent with butter and fresh thyme.

Layer thinly sliced white beets in a cream gratin for an elegant side dish.
Raw Salads
Shave thin for a clean, white-fleshed addition to composed salads.
