Spring Mix
Spring Mix — also known as mesclun or gourmet salad blend — is a tender assortment of young, delicate salad greens rather than a single lettuce variety. A typical blend includes baby lettuces (red and green oak leaf, lollo rosso, tango), arugula, mizuna, frisée, radicchio, spinach, and mustard greens, prized for the variety of color, texture, and flavor it brings to a single bowl.
A loose, colorful tangle of small, tender leaves in shades of green, red, bronze, and deep burgundy. Leaves vary in shape — frilly, serrated, smooth, and oak-lobed — giving the blend its signature visual appeal. Sold loose in bags or clamshells rather than as heads.
Texture: Universally tender and delicate — the young leaves are thin and pliable with no tough ribs. Each bite offers a slightly different mouthfeel, from the smooth butteriness of baby lettuce to the frilly crunch of frisée.
Flavor: A balanced, complex profile that shifts with every forkful — mild and sweet from the baby lettuces, peppery and nutty from arugula and mustard, and gently bitter from radicchio and frisée. The blend is designed so no single green dominates.
Fresh Salads
The classic use — toss with a light vinaigrette just before serving. The tender leaves shine with simple dressings; avoid heavy creamy ones that weigh them down.
Bed for Proteins
Use as an elegant base for grilled chicken, fish, or steak. The variety of greens complements almost any main.
Sandwiches & Wraps
Add a handful for color and a mix of flavors in place of a single lettuce — lifts an ordinary sandwich.
Wilted Salads
Pour a warm vinaigrette over the leaves and toss briefly — the delicate greens wilt instantly into a tender warm salad.
• Dress only what you'll eat immediately — once dressed, the tender leaves collapse and wilt within minutes
• Rinse gently in cold water and spin or pat dry; excess moisture is the enemy of these delicate leaves
• The blend's proportions vary by season and producer — each bag is a slightly different salad
The most perishable of the lettuces — use within 3–5 days. Keep refrigerated in its original clamshell or transfer to a container lined with a paper towel to absorb moisture. Never freeze. If leaves begin to slimy or darken, pick out and discard the affected greens; the rest are usually still fine.
