Snow Peas

Snow peas are harvested before the peas inside develop β€” the entire flat, translucent pod is eaten, making them one of the most convenient legume vegetables. Essential to Chinese and Southeast Asian cooking, they are celebrated for their crisp texture, mild sweetness, and beautiful bright green color that stays vivid with brief cooking.

Appearance

Flat, translucent bright green pods with tiny, barely developed peas visible as shadows through the skin. Typically 2–3 inches long. The pods are thin and flexible β€” they snap crisply when fresh. You can see the outline of the tiny peas through the pod wall.

Texture & Flavor

Texture: Crisp and snappy when fresh and raw. With very brief cooking (1–2 min in a stir-fry), they remain crisp and retain their bright color. Overcooking makes them limp and dull-colored.

Flavor: Sweet, fresh, and mildly grassy β€” the most delicate pea flavor. The thin pod has a clean sweetness without the stronger flavor of Sugar Snaps.

Storage
