Serrano Pepper

The serrano is the pepper of choice for many Mexican cooks who want more heat than a jalapeño delivers. Smaller, thinner, and significantly hotter, serranos have a bright, fresh, grassy flavor that works beautifully in fresh preparations like salsa verde and guacamole.

Serrano vs. Jalapeño

Serrano

  • • Smaller (1–4 inches) and thinner-walled
  • • 3–5x hotter than a jalapeño
  • • Brighter, crisper, grassier flavor
  • • Best used fresh — too thin-skinned to roast easily

Jalapeño

  • • Larger (2–4 inches) and thick-walled
  • • Milder heat, more predictable
  • • Richer, slightly earthier flavor
  • • Great roasted, stuffed, pickled
Best Uses

Fresh Salsa Verde

Storage

Refrigerate in the crisper for up to 2 weeks. Their thin skin means they dry out faster than jalapeños — use sooner rather than later. They also freeze well: chop and freeze flat before bagging.
