The gold standard of Italian canned tomatoes, San Marzano is a specific variety of plum tomato grown in the rich volcanic soil of the Sarno River valley near Naples, Italy. Prized for their exceptional sweetness, low acidity, and easy-to-peel flesh, they are the tomato of choice for authentic Neapolitan pizza and marinara sauce.
True San Marzano tomatoes (Pomodoro S. Marzano dell'Agro Sarnese-Nocerino) carry a DOP (Denominazione di Origine Protetta) designation — a European protected status ensuring authenticity. They must be grown in a specific area near Naples, in the volcanic soil of Mount Vesuvius, harvested by hand, and processed in a specific way.
Many canned tomatoes labeled "San Marzano style" or simply "San Marzano" in the US are not DOP-certified. Look for the DOP seal on the can for the real thing.
Flavor: Distinctly sweet with remarkably low acidity — a balanced, complex tomato flavor that needs little added sugar or long cooking to be delicious.
Texture: Meaty with dense flesh, few seeds, and an easy-to-remove skin. The flesh is firmer and less watery than standard plum tomatoes.
