Petit Pois
Petit pois (French for "small peas") are a specific variety of garden pea bred to stay small and exceptionally sweet. Developed in France and long a fixture of classic French cuisine, they are harvested earlier than standard garden peas when the peas are barely larger than a large match head β this small size means extraordinarily tender texture and concentrated sweetness.
Tiny, uniformly round peas β noticeably smaller than regular garden peas. Vivid bright green, very smooth skin. Almost impossible to find fresh outside of very high-end markets or home gardens; most commonly encountered as frozen petit pois, which are excellent quality.
Texture: The most tender of all pea varieties β each tiny pea is barely firmer than a drop of cream. They practically melt on the tongue. Even brief overcooking turns them to mush β vigilance is required.
Flavor: More concentrated sweetness and more delicate flavor than regular garden peas. The small size means a higher surface-area-to-volume ratio, delivering more flavor with each bite. The definitive pea flavor for classical French cooking.

Pasta
Stir into pasta with butter and Parmesan at the very end of cooking β just enough heat to warm through.
Risotto
Add in the final minutes of risotto β they retain their shape and sweetness as a beautiful contrast to the creamy rice.
Simple Butter
Warm gently in butter with salt and mint β the simplest preparation is often the best for such a fine ingredient.

β’ Good quality frozen petit pois are excellent β the commercial freezing process captures them at perfect sweetness
β’ Never rinse with cold water after cooking β just drain and serve immediately to preserve heat and texture
Fresh: use immediately. Frozen: store in freezer up to 12 months β do not refreeze after thawing. The quality of frozen petit pois is remarkably high; they are one of the best frozen vegetables available.
