Milk

The foundation of all dairy, milk is the nourishing liquid produced by mammals to feed their young. Cow's milk dominates Western cooking, but goat, sheep, and water buffalo milk are prized for distinctive flavors and traditional cheeses. Fresh, whole milk is the starting point from which butter, cheese, yogurt, and cream are all made.

Buying Guide

Choose milk that is cold to the touch and well within its use-by date. At farmers' markets, look for low-temperature (vat) pasteurized milk, which retains more of the fresh, sweet flavor that high-temperature pasteurization can mute.

Whole milk offers the best flavor and performance for cooking and baking. Skim and low-fat milks work for everyday drinking but lack the richness needed for custards, sauces, and baked goods. For drinking, seek out milk from grass-fed dairies — it has a richer flavor and color from beta-carotene.

Storing Tips

Keep milk in the main body of the refrigerator — never the door, where temperature fluctuates — at a consistent temperature below 40°F (4°C). Once opened, use within 5–7 days for best quality.

Milk can be frozen for up to 3 months, but it may separate slightly on thawing and is best used for cooking afterward. Thaw frozen milk in the refrigerator, not at room temperature.

Cooking Methods

Milk is the base of countless preparations — it enriches, tenderizes, and forms the foundation of custards, sauces, and baked goods.

Beverages: Fresh cold milk, steamed for lattes, or warmed with honey and spices for a comforting nightcap.

Custards & Puddings: Heated gently with eggs and sugar to make crème anglaise, pastry cream, rice pudding, and panna cotta.

Sauces: The base of béchamel (milk thickened with a butter-and-flour roux) for macaroni and cheese, gratins, and cream soups.

Baking: Whole milk tenderizes cakes, breads, and pancakes and is the liquid in many batters and doughs.

Preserving Methods

Freezing: Milk can be frozen for up to 3 months; thaw in the refrigerator and use for cooking, as the texture may separate.

Culturing: Milk can be cultured at home into yogurt, kefir, buttermilk, and crème fraîche using starter cultures — the lactic acid produced extends shelf life well beyond fresh milk.

Condensing: Sweetened condensed milk and evaporated milk are shelf-stable preserved forms of milk, essential for fudge, key lime pie, and many traditional desserts.

Nutrition & Health Benefits

A single glass of whole milk provides about 8g of high-quality protein, 300mg of calcium (nearly a third of the recommended daily intake), and significant phosphorus, vitamin D, vitamin A, riboflavin, and vitamin B12.

The calcium in milk is highly bioavailable, making it one of the most efficient dietary sources of this critical mineral for bone health. Whole milk also provides conjugated linoleic acid (CLA), a beneficial fatty acid associated with metabolic health.

Lactose-intolerant individuals can choose lactose-free milk, in which the lactose has been pre-digested, or plant-based alternatives — though these lack milk's complete protein and bioavailable calcium.

Fun Facts

Humans began domesticating dairy animals around 10,000 years ago — cattle, sheep, and goats were among the first. The ability to digest milk as adults (lactase persistence) evolved independently in several populations, a remarkable example of human genetic adaptation to diet.

The average American consumes about 20 gallons of milk per year. A single dairy cow produces roughly 6–8 gallons of milk per day.

Water buffalo milk is the traditional base of authentic mozzarella di bufala — its higher fat and protein content produces a softer, richer cheese than cow's milk mozzarella.

Sustainability & Environmental Impact

Dairy farming is resource-intensive, requiring substantial land, water, and feed. Cattle produce methane, a potent greenhouse gas, making dairy a notable contributor to agricultural emissions.

However, well-managed pasture-based dairy systems can sequester carbon in soils and support biodiversity. Choosing milk from grass-fed, organic, or regenerative farms reduces the impact, and local dairies shorten the supply chain.

Reducing dairy waste is one of the most effective individual actions — buy only what you need and store properly to prevent spoilage.
