Iceberg Lettuce
Iceberg lettuce is the most controversial lettuce — dismissed by chefs for its low nutritional value and bland flavor, yet beloved by millions for its incomparable crunch, refreshing hydration, and neutral taste that never competes. The wedge salad and the burger lettuce exist because of Iceberg — and both remain perennially satisfying for a reason.
Tightly compact, spherical head with pale green to almost white inner leaves and slightly darker outer leaves. Very dense and heavy — the tight packing creates the characteristic crunch. The highest water content of any lettuce variety (over 96%).
Texture: The crunchiest lettuce by far — the densely packed, water-filled cells create an extraordinary snap and crispness. This texture is irreplaceable for certain applications.
Flavor: Very mild and neutral — almost no flavor beyond fresh, cool, and watery. This neutrality is actually a feature in many applications, where a strong lettuce flavor would be unwanted (burgers, tacos, sandwiches).

• To core easily, slam the core end firmly on a counter — it loosens and can be twisted out
• Run cold water into the cored hollow to separate leaves without tearing
• Pairs best with creamy, bold dressings (blue cheese, ranch, thousand island) that compensate for its mild flavor
The longest-storing lettuce — whole heads keep 2–3 weeks in the refrigerator. The dense head protects the interior leaves. Once cut, wrap tightly and use within 5 days.
