Honeycrisp Apple

Developed at the University of Minnesota and released in 1991, the Honeycrisp has become one of the most beloved apples in North America in just a few decades. Its signature explosive crunch and perfect sweet-tart balance β€” achieved through unusually large cells that burst with juice when bitten β€” set a new standard for what a fresh eating apple could be.

Flavor & Texture

Honeycrisp is defined by its extraordinarily crisp, juicy bite β€” the cells are larger than most apple varieties, which creates an explosive snap when you bite through the skin. The flavor is a well-balanced blend of sweetness and tartness, with honey notes and mild berry undertones.

The flesh is cream-colored, coarse-grained, and exceptionally juicy. It browns slowly after cutting, making it excellent for fruit salads and cheese boards where appearance matters.

Season & Buying

Peak season is September through November. Honeycrisp stores exceptionally well β€” properly refrigerated, they can maintain quality for 6–7 months, which is why they're available through spring in many markets.

Choose firm Honeycrisps with no soft spots, a yellow-orange blush over a pale green background. Avoid any with a mealy texture (press lightly) or wrinkled skin. Larger Honeycrisps tend to have more pronounced flavor.

Best Uses

Fresh Eating

The Honeycrisp's primary calling β€” its crunch and juice are best experienced raw, eaten out of hand.

Salads

Slow browning and firm texture make it ideal for Waldorf salads, kale salads, and sliced fruit boards.

Cheese Pairings

Pairs beautifully with aged cheddar, Brie, and Gruyère — the sweetness and acidity complement both mild and strong cheeses.

Baking

Holds its shape reasonably well when baked, though it releases a lot of juice. Mix with a starchier variety for pies.

Storage

Honeycrisps are one of the best-storing apples β€” refrigerate in the crisper drawer and they'll keep 1–2 months easily. They emit ethylene gas, so store away from other produce. At room temperature, use within 1 week.
