Granny Smith Apple
The Granny Smith is one of the most recognizable apples in the world — a bold, bright green with a sharp, refreshing tartness that is unlike any other common variety. It originated in Australia in the 1860s from a chance seedling grown by Maria Ann "Granny" Smith and has since become the undisputed king of baking apples and a global symbol of the apple category.
Granny Smiths are intensely tart with almost no sweetness — the highest-acid commercial apple variety. The flesh is very firm, dense, and creamy white, with a satisfying crunch. The tartness is clean and bright, with green apple and citrus notes.
The skin is thick and tough — more so than sweeter varieties — which contributes to its excellent structure when baked. It browns very slowly after cutting, one of the slowest of any apple variety.
The combination of high acidity, very firm flesh, and low sugar makes the Granny Smith the ideal baking apple. The acidity balances the sugar added in recipes, preventing cloying sweetness. The firm flesh holds its shape during long baking times rather than collapsing into mush.
For apple pie, most professional bakers either use Granny Smith alone or blend it with a sweeter variety (like Honeycrisp or Golden Delicious) for complexity. The Granny Smith provides structure and tartness; the sweeter variety provides flavor depth.
