Cylindra Beets
Cylindra beets (also called Formanova) are elongated, carrot-shaped beets bred specifically for uniform slicing. Their cylindrical form produces nearly identical rounds, making them the preferred choice for professional kitchens and home cooks who want consistent presentation.
Long, cylindrical shape, 6–8 inches in length and 2 inches in diameter. Deep red-maroon exterior and interior. All slices are the same size — ideal for uniform cooking and plating.
Texture: Firm and dense, very similar to the classic red beet. Slightly higher flesh-to-skin ratio due to the shape.
Flavor: Rich, sweet, and earthy — essentially the same as Detroit Red beets. The flavor is consistent from end to end with no tough core section.
Slicing & Roasting
Cut into uniform rounds and roast — each slice cooks evenly and presents beautifully.
Pickling
Produces perfect round pickled beet slices — great for sandwiches and charcuterie boards.
Boiling
Boil whole, then slice into uniform coins for salads and appetizers.
Carpaccio
Thinly slice raw or lightly cooked for an elegant beet carpaccio presentation.
