Beefsteak Tomatoes

The largest of the common tomato varieties, beefsteaks are the kings of the slicing tomato world. Their thick, meaty slices and firm flesh make them the perfect tomato for burgers, sandwiches, and any preparation where a substantial, juicy slab of tomato is the star.

Appearance

Beefsteak tomatoes are large and round — often 4–6 inches across and weighing up to 2 pounds each. The skin is smooth and deep red (though some heirloom beefsteaks come in pink, yellow, or striped). The interior has many seed locules (cavities) surrounded by substantial, meaty flesh.

Flavor & Texture

Flavor: Classic, well-balanced tomato flavor — sweet with moderate acidity. Juicy and satisfying without being overpowering.

Texture: Meaty and firm with a substantial chew. Holds its shape when sliced, making it ideal for layering. The high juice content makes each bite satisfying.

Best Uses

Burgers & Sandwiches

The classic BLT or burger tomato — thick slices that hold together and don't slip out

Stuffed Tomatoes

Large cavity is perfect for stuffing with grains, meat, cheese, or vegetables

Sliced with Salt

The simplest preparation — thick slices with flaky salt, olive oil, and basil

Caprese

Alternate thick slices with fresh mozzarella and basil for a classic presentation

Buying & Storage

Peak season is mid-summer through early fall. Choose firm tomatoes that yield slightly to pressure — heavy for their size. Avoid any with soft spots or cracks.

Store at room temperature, stem side up, and use within 3–4 days of peak ripeness. Never refrigerate unless overripe.
