Baby Kale
Baby kale refers to young leaves of any kale variety — most commonly Red Russian or Lacinato — harvested at 3–4 inches when still small, tender, and mild. It bridges the gap between mature kale and delicate salad greens, offering kale's nutritional benefits with a texture suitable for salads straight from the bag.
Small, 2–4 inch leaves — depending on the variety, may be slightly ruffled (baby curly), strap-shaped (baby Lacinato), or lobed (baby Red Russian). Typically sold pre-washed in bags or clamshells alongside other salad greens.
Texture: Significantly more tender than mature kale — no tough stems or fibrous ribs to remove. Can be eaten directly without any preparation beyond rinsing.
Flavor: Milder than mature kale with a pleasantly green, slightly sweet flavor and just a hint of the characteristic kale bitterness. Essentially kale-flavored salad greens.
Salads
Use exactly like mixed greens or spinach — no prep needed. Pairs well with fruit, nuts, and creamy dressings.
Smoothies
The most convenient kale for smoothies — no chopping or rib removal needed.
Wilted
Quick-wilt in a warm pan with olive oil — takes under a minute. Great base for eggs and grain bowls.
Sandwiches & Wraps
Use as a salad green replacement in sandwiches for a more nutritious option.
• The most convenient form of kale — pre-washed, ready to use, no stripping required
• Less nutritionally dense than mature kale (younger leaves) but still far more nutritious than most salad greens
• Blends particularly well in smoothies — the small leaf size doesn't overwhelm the blender
Refrigerate and use within 5–7 days of purchase. Keep the bag sealed until use. Once opened, transfer to an airtight container with a paper towel to absorb excess moisture.
