Baby Carrots
There are actually two distinct products sold as "baby carrots." True baby carrots are whole, miniature carrots harvested young. The far more common supermarket version — the smooth, uniform little cylinders in bags — are actually "baby-cut" carrots: full-size Imperator carrots cut, peeled, and tumbled into shape by machine.
True Baby Carrots: Whole carrots harvested at 3–4 inches. Still have their thin skin, feathery tops, and tapered tip. Much more flavorful than baby-cut, with a sweeter, more concentrated carrot taste. Found at farmers' markets and specialty stores.
Baby-Cut Carrots: Full-size Nantes or Imperator carrots cut to 2-inch pieces, machine-peeled and polished into the smooth cylinders found in bags. Convenient and snack-ready, but less flavorful than whole baby carrots. The white coating that appears is simply dried carrot flesh — rinse or submerge in water to refresh them.
True Baby: Exceptionally tender throughout — no woody core, very crisp and sweet with a more concentrated flavor than mature carrots.
Baby-Cut: Crisp and mild. The machine cutting removes the outer sweet layer, leaving a slightly less flavorful product, but still a healthy, convenient snack.
Snacking Raw
The primary use for baby-cut carrots — convenient, portion-controlled, ready to eat.
Roasting Whole
True baby carrots roasted whole with herbs and honey make a stunning side dish.
Glazing
Baby carrots glazed in butter and maple syrup — a classic preparation that lets their sweetness shine.
Dips & Crudités
The uniform size makes baby-cut perfect for dipping platters.
• Submerge dry or "white" baby-cut carrots in cold water for 10 min to restore moisture and crunch
• True baby carrots from a farmers' market are significantly more flavorful — worth seeking out
• Baby-cut carrots work perfectly in any recipe calling for sliced carrots
Baby-cut carrots: store submerged in water in a covered container for 1–2 weeks (change water every few days). True baby carrots: refrigerate like regular carrots for up to 2 weeks.
