Red Onion
Red onions are the most visually dramatic allium — their deep purple-red skin and layered magenta and white flesh make them a natural choice wherever color matters. Milder than white onions with a pleasant sweetness and slight pepperiness, they are mild enough to eat raw in salads and sandwiches while also being exceptional pickled and grilled.
Deep purple-red papery skin with flesh that alternates between magenta-purple and white in concentric rings. Medium to large globe-shaped. When cut, the striking color contrast is visually beautiful — particularly for raw preparations where the color remains vivid.
Raw: Milder than white onions with a pleasant peppery bite and slight sweetness. One of the better onions for raw use — mild enough that most people find it palatable directly in salads and on sandwiches.
Pickled: Transforms into one of the great condiments — the anthocyanins turn the pickling liquid a brilliant hot pink, and the onions become tangy, sweet, and completely addictive.
Cooked: Loses most of its color, becoming gray-purple. Flavor is good but less distinctive than raw or pickled — yellow onions are generally preferred for long-cooked preparations.
Quick Pickling
The highest and best use — vinegar, salt, sugar, 30 min. The pink color is spectacular; the flavor is perfect.
Raw in Salads
Thinly sliced red onion in Greek salad, fattoush, and green salads — color and mild bite.
Grilling
Grill thick rounds or halved — the color partially holds and the flavor sweetens beautifully.
Flatbreads & Pizza
Thin slices on pizza and flatbread — their slight sweetness balances savory toppings.
• For quick pickled red onions: slice thin, combine with red wine vinegar, salt, and a pinch of sugar — ready in 30 minutes, lasts 2 weeks refrigerated
• Soak raw slices in cold water 10 min to reduce sharpness for salads
• The color bleeds in hot preparations — account for this when combining with other ingredients
Store like yellow onions in a cool, dry, ventilated place for 1–2 months. The thinner skin means a slightly shorter shelf life. Refrigerate cut red onion and use within 7 days.
