Recipe from Simply Julia: 110 Easy Recipes for Healthy Comfort Food
Ingredients
- 3 tablespoons unsalted butter
- 1 pound [453 g] red cabbage, thinly sliced (about 7 cups)
- 2 green apples, peeled, cored, and coarsely grated
- 1/4 cup [60 ml] water
- 1/4 cup [60 ml] red wine vinegar
- 3 tablespoons light brown sugar (or granulated sugar)
- 1 teaspoon, plus more as needed kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- 1
Place the butter in a large, heavy pot (like a Dutch oven) over medium heat.
- 2
Once it melts, add the cabbage and apples and cook, stirring now and then, until beginning to soften, about 15 minutes.
- 3
Add the water, vinegar, brown sugar, salt, and pepper.
- 4
Turn the heat to high and bring the mixture to a boil.
- 5
Turn it to low, partially cover the pot (allow some steam to escape), and simmer, stirring every so often, until the cabbage is very tender, about 30 minutes.
- 6
Season to taste one final time with salt (and/or additional vinegar and/or sugar).
- 7
Serve hot.
