Picholine Olive
From the Languedoc region, southern France
The Picholine is an elegant, elongated green French olive with a crisp texture and a pleasantly nutty, mildly salty flavor with subtle citrus notes. Originating in the Languedoc region of southern France, it's one of the most popular French table olives and is also cultivated in Morocco and the United States (particularly California). Its firm texture means it holds up beautifully in cooking and on cheese boards alike.
Crisp, firm, and snappy with a nutty, mildly salty flavor and bright citrus undertones. Less bitter than many green olives, with a clean finish. One of the most refined-tasting table olives available.
Cheese Boards: A classic French pairing with aged Comté, Roquefort, or fresh chèvre.
Cocktails: Their elegant flavor profile makes them an upscale choice for martinis.
Braised Chicken: Classic in French braises — their firm texture holds up well during cooking.
Tapenade: Produces a lighter, more refined tapenade with nutty, citrusy notes compared to Kalamata-based versions.
The Picholine is one of the few French olive varieties grown commercially in the United States, particularly in California's Central Valley.
In Morocco, a related variety called Picholine Marocaine is the country's dominant olive variety and is used both for table olives and oil.
