Green Zebra Tomato

One of the most visually striking tomatoes you'll ever encounter, Green Zebra was developed in the 1980s by tomato breeder Tom Wagner. Its bright green skin striped with darker green makes it look almost like a small watermelon — and it stays green even when fully ripe, making it both a conversation piece and a flavor standout.

Flavor & Texture

Green Zebra has a bright, tangy, and sharply sweet flavor — a zesty acidity that makes it one of the most refreshing tomatoes you can eat. The flavor is often described as "citrusy" with a clean, sharp bite that wakes up the palate.

The flesh is firm and meaty with a satisfying texture that holds up well in salads. The skin is slightly thicker than many heirlooms, which helps it resist cracking. Fruits are small to medium, about 2–3 inches across, and perfectly round.

Season & Buying

Peak season is mid to late summer. Green Zebra matures in about 75–80 days and produces prolifically. Available at farmers' markets and specialty grocers.

Since Green Zebra stays green when ripe, look for fruits with a slight yellow blush on the bottom and fruits that yield slightly to gentle pressure. Avoid rock-hard fruits — they need to be fully ripe for the best flavor. A faint sweet aroma near the stem is a good sign.

Best Uses

Salads

The bright, tangy flavor and striking appearance make it a star in any mixed tomato salad.

Sliced Fresh

The zesty, citrusy bite is refreshing on its own — just salt, olive oil, and enjoy.

Salsa Verde

A natural for green salsas — the tangy flavor complements tomatillos and jalapeños.

Caprese Variation

Substitute for red tomatoes in caprese for a dramatic color twist with equally great flavor.

Storage

Store at room temperature and use within 3–4 days. Green Zebra holds up slightly better than many heirlooms due to its firmer skin, but should still never be refrigerated for best flavor.
