Grass-Fed Butter
Grass-fed butter is made from the milk of pasture-raised cows that graze on grass rather than grain. It has a deep golden color and a richer, more complex flavor, and is notably higher in beneficial nutrients like omega-3s, vitamin K2, and CLA.
Grass-fed butter has a deeper golden-yellow color (from beta-carotene in the grass) and a richer, more herbaceous flavor than butter from grain-fed cows. The flavor varies seasonally — deepest and most golden in spring and early summer when pasture is lushest.\n\nThe texture is the same as standard butter, but the flavor is more complex and 'buttery,' with a faintly grassy, floral note.
Available year-round (Kerrygold, Anchor, Vital Farms, and many local brands). Look for 'grass-fed' or 'pasture-raised' on the label. Irish and New Zealand butters are reliably grass-fed.\n\nThe color is a clue — deep golden butter is a sign of grass-fed; pale butter is usually grain-fed. Spring and summer butter is the most golden and flavorful.
Finishing
Its rich flavor makes it ideal for finishing — on steak, vegetables, or fish where the butter is tasted directly.
Baking
Adds a deeper, more complex flavor to shortbread, cookies, and pastry — worth the extra cost for butter-forward recipes.
Spreading
On good bread, the golden color and rich flavor make it a luxurious simple treat.
Ghee
Makes an exceptional, nutty ghee with a deeper flavor than conventional butter.
Refrigerate wrapped tightly for up to a few weeks; freeze for up to 6 months. The higher nutrient content (especially beta-carotene) means it can oxidize slightly faster — keep it well wrapped and sealed.
