Figs

The fig (Ficus carica) is one of the first plants ever cultivated by humans — evidence of fig cultivation in the Jordan Valley dates to 9,400 BCE, predating wheat and barley. Not technically a fruit but a syconium — an inverted flower — figs are honeyed, jammy, and complex, with a brief fresh season of extraordinary beauty.

Buying Guide

A ripe fresh fig is soft and heavy, with a slight droop at the neck and sometimes a droplet of syrup weeping from the stem end — this syrup is a sign of peak sweetness. The skin may be slightly wrinkled; this is normal and can indicate concentrated flavor.

Fresh figs are extremely perishable — buy only what you'll use in 2–3 days. They should be purchased fully ripe and eaten immediately. Fresh figs are available in two seasons: early summer (June–July, Breba crop) and late summer to fall (August–October, main crop). Late-season figs are typically larger and more flavorful.

Popular Varieties

Black Mission

Dark purple-black skin, deeply sweet pink flesh with a rich, jammy flavor. The most common US fresh fig.

Brown Turkey

Brownish-purple skin, mild and sweet. Large and productive — widely grown in home gardens.

Calimyrna (Smyrna)

Green-skinned with nutty, amber-toned flesh. The most prized variety for drying.

Adriatic / White

Pale green skin, very sweet pale flesh. Used primarily for white fig jam and preserves.

Storing Tips

Fresh figs are among the most perishable fruits — refrigerate immediately upon purchase and use within 2–3 days. Arrange in a single layer on a paper towel-lined tray; don't pile them. Remove any overripe figs immediately.

Dried figs keep 6–12 months in a cool, dry place, or up to 18 months refrigerated. They are an excellent pantry staple — far more available and versatile than fresh figs.

Cooking Methods

Fresh with Cheese & Charcuterie: The simplest and best preparation — ripe fresh figs need nothing. Halved alongside prosciutto, burrata, blue cheese, or aged pecorino. No cooking required.

Roasting & Broiling: Halve fresh figs, drizzle with honey, add a sprig of thyme, broil until caramelized and bubbling. Serve on toast, with yogurt, or alongside pork, duck, and lamb.

Fig Jam: Quartered figs cooked with sugar and lemon juice — one of the great fruit preserves. Extraordinary with cheese, on charcuterie boards, and in baked goods.

Salads: Fresh figs with arugula, walnuts, prosciutto, and aged balsamic — a classic Italian summer combination.

Braised Dishes: Dried figs braised with lamb, chicken, or pork — the sweetness and acidity balance savory richness. A traditional preparation across the Mediterranean and Middle East.

Preserving Methods

Fig Jam & Preserves: The most traditional preservation — cook quartered figs with sugar and lemon juice until thick. The natural pectin in figs is moderate. A vanilla bean or cardamom pod during cooking adds extraordinary complexity.

Drying: Figs can be sun-dried or dehydrated at home. Dried figs are dense, intensely sweet, and shelf-stable for months. Slice in half and dehydrate at low temperature for 8–12 hours.

Fig Vinegar: Figs fermented into vinegar — a traditional Mediterranean preparation with a sweet, complex flavor profile.

Pickled Figs: Whole figs pickled in spiced vinegar — an excellent accompaniment to cheese, charcuterie, and grilled meats.

Nutrition & Health Benefits

Fresh figs are a good source of dietary fiber (3g per medium fig), vitamin B6, potassium, and calcium. Dried figs are significantly more concentrated nutritionally — they contain nearly 10 times the fiber, calcium, and potassium per ounce as fresh figs, making them one of the most calcium-rich plant foods available.

Figs contain both soluble and insoluble fiber, supporting digestive health and regular bowel function. The ancient use of figs as a digestive aid is well-supported by their fiber content.

Figs are among the few non-dairy, non-meat foods with meaningful calcium content — 3 dried figs provide about 120mg of calcium (12% DV), making them valuable for bone health in plant-based diets.

These figs were likely a parthenocarpic variety (not requiring pollination), suggesting intentional cultivation.

Figs are not actually fruits in the botanical sense — they are syconia, an inverted flower structure. What you eat when you eat a fig is hundreds of tiny flowers turned inward, with the sweet outer flesh developing from the stem. The tiny crunchy bits inside are individual flowers and seeds.

Most commercial fig varieties (including Mission and Calimyrna) are pollinated by a tiny wasp (Blastophaga psenes) that enters through the eye, pollinates the flowers, and sometimes dies inside. Digestive enzymes in the fig break down the wasp — so yes, there may be digested wasp in your fig jam. This process, caprification, has been practiced for 3,000 years.

Sustainability & Environmental Impact

California produces virtually all US commercial figs — it is one of the only states warm and dry enough for fig production. Turkey, Egypt, Morocco, and Iran are the dominant global producers of dried figs.

Fig trees are remarkably sustainable — they are drought-tolerant once established, require minimal irrigation compared to most fruit trees, and produce prolifically with relatively few inputs. A well-maintained fig tree can produce fruit for 200 years.

The fig wasp relationship is one of the most refined examples of coevolution in nature — each is dependent on the other for reproduction. This mutualism has existed for 87 million years and has resulted in extraordinary specificity: each fig species has its own unique wasp species.
