Black Krim Tomato
A striking heirloom from the Crimean Peninsula on the Black Sea, Black Krim is one of the darkest and most richly flavored tomatoes available. Its deep mahogany-red skin with green shoulders and its intense, almost salty-sweet flavor make it a favorite among heirloom enthusiasts who seek out the deepest, most complex tomato flavors.
Black Krim has an intense, rich flavor that's often described as "smoky" or "earthy" — a deep sweetness with a distinctive salty undertone that makes it taste almost savory. The complexity is remarkable; it's one of the most full-flavored tomatoes you can grow.
The flesh is soft and juicy with a deep, dark red interior that can appear almost purple in certain light. The skin is thin and prone to cracking, like many heirlooms. Fruits are medium to large, slightly flattened, and often have green or dark shoulders that remain at full ripeness.
Peak season is mid to late summer. Black Krim matures in about 70–80 days and does well in warm climates. Available at farmers' markets and from specialty seed savers.
Look for fruits with deep, dark coloring — the darker the better. Green shoulders are normal and don't indicate under-ripeness. The fruit should yield slightly to pressure. Some cracking near the stem is common and harmless. Avoid any with soft spots or wrinkled skin.
Sliced Fresh
The deep, smoky flavor is best raw — thick slices with salt and olive oil are extraordinary.
Sandwiches
The rich, savory depth makes for a memorable tomato sandwich or BLT with a dark, complex twist.
Caprese
The dark color creates a dramatic plate, and the salty-sweet flavor pairs beautifully with fresh mozzarella.
Tomato Salad
Combine with brighter varieties for a salad with a range of flavors and a striking color palette.
Black Krim is fragile and perishable. Use within 2–3 days of purchase. Store at room temperature, stem-side down. Never refrigerate — the complex, smoky flavor compounds are destroyed by cold.
